Sushi for Sillies

Ingredients:

For the rice-

295 ml sushi rice (I always use Calrose )

355 ml water[1]

For the seasoning-

60 ml rice vinegar

45 ml sugar

4 ml salt [2]

30 ml sake [3]

[1]- Or you can use the popular 'finger method' but you'll get exactly the same results.

[2]- This is to my taste. If I have guests, I will add up to 8ml salt, which most people prefer. You might want to start with 4ml and taste it and then add more to your taste. You also need to consider what you are using as filling. If I'm using only raw vegetables, I might add 6ml of salt. If I'm using, for example, tinned crab, which is already very salty, I might even reduce the salt to 3ml...

[3]- Most people use mirin. I like to use sake because it's what I always already have. If you want to use mirin, you do not have to adjust the amounts of sugar and salt. If you don't want to use sake or mirin at all....you're out of luck. Not really. I've never tried it before, but you can probably get away with just adding a little more vinegar and sugar. Who knows.....you will have to try it for yourself.

1. Don't follow the directions on the bag of rice. The water doesn't have to run clear. You only need to wash it 3 to 5 times. I like to wash it 6 times, because I like even numbers.

If you don't know how to wash rice......hahahaha.

2. At this point, most sushi recipes will tell you to allow the rice to dry for 30 to 60 minutes. I think that's a waste of time, because once it's dry, you're going to add water to it anyway....... Plus I've noticed that my rice is more likely to cook perfectly if I don't let it dry. I don't use a rice cooker, I make mine on a stove. If you have a rice cooker, you can use it.

3. If you don't use a rice cooker, put the rice and water in a pan. Quickly bring it to a boil, then turn the heat to medium and put a lid on the pan.

DO NOT TAKE THE LID OFF UNDER ANY CIRCUMSTANCES!!!!!!!!!!!!

4.Let it cook for ten minutes, then move the rice from the heat and let it rest for 15 minutes.

STILL DO NOT TAKE THE LID OFF!!!!!!!!!!!!!!

Never remove the lid from the time you turn the heat down until the fifteen minutes is over.

5. In the meantime, combine the rice vinegar, sugar, salt, and sake in a bowl. I like to microwave it for one minute to dissolve the sugar and salt and to cook the sake away. You can also heat it on the stove but it's more efficient to use the microwave.

You don't add all of this to the rice. I've never actually measured this part before, I always do it by eye, but you should remove about 15 ml of it and put it in another bowl, and add about 235 ml water to it. It is now tezuke.

6. After the rice has rested for 15 minutes, put the rice in a sushioke. If you don't have a sushioke, you can use anything that is large and shallow and glass. A cake pan or a large serving bowl for instance....

Add the vinegar (NOT THE TEZUKE) and mix it in gently while fanning the rice to cool it. You can use an electric fan if it pleases you...

The end.

Not really....you should always remember to wet your hands with the tezuke before handling the rice to spread it on the seaweed.

-Also remember to dip your knife in the tezuke before cutting the sushi roll.

-Also, when you're spreading the rice on the seaweed, you don't need to put it on too thick. It's okay and actually better if you can see some seaweed through the rice.

-You don't need a bamboo mat to roll the sushi, but you definitely do need one to apply even pressure to the roll once it's rolled. Apply enough pressure so the filling doesn't collapse when you cut into it. Don't apply so much pressure that the filling comes out of the sides.

I've had some people complain that the rice is too sticky to work with. IT'S SUPPOSED TO BE STICKY. EXTREMELY STICKY RICE MEANS THAT IT IS SUCCESSFUL. That is what the tezuke is for. Don't forget to use your tezuke properly.

...The end.

Please come back again for my next entry: "Dumplings for Dumbasses."

When I was a child I hated miso soup, and now I have it every morning, and the smell of it brings back pleasant memories. Sometimes I like to squeeze the instant miso packet directly into my mouth.
But that has nothing to do with this entry.

Here is a Cloud Strife video I made.

http://s215.photobucket.com/albums/cc59/ringorinhatsu/?action=view&current=cloudvideo.flv

Senri doesn't mind that I like Cloud Strife, because Cloud isn't real. Of course if he did suddenly exist, I would drop Senri like a hot potato. At least for a couple of days until I had drained every bit of life from Cloud's body, after which I would return and beg Senri for forgiveness.

Not really, in fact here's a picture to demonstrate:

Speaking of Senri, here's another melodramatic video I made about Hikaru leaving. Even though Hikaru left last summer, but we were too distressed to make a video about it until now. Well Senri was, but actually Sho is my favorite so it doesn't really make a difference to me.
I guess the song is from Sho's point of view, since we all know that's how he felt when Hikaru left.
But don't download it if you're too young or if you're Momiji.

http://www.megaupload.com/?d=19KDD00R

千早ニュス最後

I had wanted to update last night but i fell asleep as soon as I got home.

By the way, we finally found Makoto. Actually he found us when he turned up at the hospital yesterday afternoon. He was in fact injured.......pretty badly........but he'll live. And his mobile phone had gotten broken which is why he couldn't contact anyone. Yes....there are public phones, but if I can't even remember my phone number, how can he be expected to remember it? So I'm not going to yell at him about it. That's all I know, so don't bother asking me about more information. I didn't want to ask, because I think it's for the best if I don't know exactly what happened, because then I would worry even more than I already do.

I do think, though, that it would be nice if he could move house, so certain people can't find him anymore. I guess even if a person tries their hardest to change their life, other people won't necessarily allow them to move on......

He was very very angry that this happened when it did, though, because he wanted to be one of the first people to know when Chihaya woke up But he showed up before anyone else had gone in to see him so he still ended up being the first one to be able to. So I guess everything worked out in the end.

As for Chihaya, his body will recover completely. His organs won't suffer from any long-term damage, and after just a few days of physical therapy he should be able to move and walk normally, and be able to take care of himself again.

He has some memory loss and difficulty communicating, but it's only because he was asleep for so long. If he can rest for a few days, he should be able to communicate normally again.

My biggest concern was that his personality would be different....it's true that he didn't have a brain injury, but the reason he fell into a coma in the first place was because of infection in his brain, as well as a lack of oxygen flowing to the brain, which can cause a lot of damage itself. People's personalities have been totally changed by lesser things. But luckily he seems to be the same. Proven when I went in to visit him and the first thing he said to me was "めんどくさい！”

His energy level has been reduced a great deal. It will probably take even a couple of months before he can go back to his daily routine, but eventually he should recover to the point that it seems like none of this ever happened.

So I guess if you came here just to read about Chihaya, you can go away now, since this will be my last entry about this. I'm pleased that it had a happy ending.
